At this time, we are only selling our beef in bulk.
Buying beef in this manner provides a significant value over buying individual cuts of meat. You’ll pay a flat rate for each cut in your order. Meaning, if you were to buy that same bulk list of cuts from the store you’d be paying much more!
There are three different types of “weight” that the price-per-pound could be based on when purchasing beef shares that you should be aware of.
The first is known as the “live” weight, or “on-the-hoof “weight of the animal. This is the weight taken right before harvest while the animal is still alive.
The second type of weight is the “hanging weight”. The hanging weight is taken right after harvest as the carcass is hung to age. The hanging weight is approximately 65% less than the live weight. If a cow had a live weight of 1200lbs. the hanging weight would then be 720lbs. Half a bulk share would be 360lbs, a quarter would be 180lbs. and so on.
Finally, there is the “final” weight, or “take-home” weight. Another way to look at it is that it’s the weight of the product you will be eating.
The take-home weight is less than the hanging weight. The loss can range from 50% to 60% depending on the fat content of the animal and the number of bone-less cuts the customer requests.
This happens for a couple of reasons. One, as the meat dry-ages it loses water, which makes it lighter. Also, fat and bone are cut away while processing the meat down into individual cuts.
We base your bulk shares on the "take-home" weight, multiplied by the price-per-pound. For example, if you purchased a 1/4 beef weighing a total of 130lbs. of "take-home" meat, it would break down like this; $6.75 per lb. x 130 lb. = $877.00. At times you may see a lower price-per-pound, but normally this is not based on the final weight. We feel that basing our calculations using the final weight is the simplest and most direct way for you to know what you are buying.
All harvest, butchering, and packaging fees are included. We will not know the exact weight of your order until your beef is processed into individual cuts. The final weight determines your price. Each animal varies in weight and size. For this reason, we provide a weight range to help you determine the minimum and maximum cost it could be.

The first step is to choose the option you’d like to purchase, then click the "Contact and Ordering" button below. As soon as we receive it, we will contact you by phone or email to inform you of the cuts we have in stock or to provide you with an estimated timeline.
If not in stock, typically, it takes a month or two from the time we receive your deposit until you take possession of your order. This will allow time to harvest the animal, age the meat for a minimum of 14 days, process it down into individual cuts, and package it. We use a USDA-approved processor. Your product will come flash-frozen and vacuum-sealed for freshness.

The lists above are an approximate idea of what you’ll receive. The size and number of cuts vary depending on the weight of the individual animal.
Trying to figure out how much storage space you will need depends on a few factors. Like the size of each cut you're receiving, the cuts you've requested (maybe more roasts fewer steaks), and lastly, how much storage space you currently have. Roughly 50 pounds of meat will fit into 2.25 cubic feet of freezer space. The empty freezer compartment of an average-sized home freezer is four cubic feet, so a 1/8 order of beef should fit inside with no problem. If you are buying larger than 1/8th, please increase the numbers based on the above example.
